Description: The processing for a Chinese Yellow tea is difficult and unique, making it quite a rare find. Similar to green teas in the amount of oxidation, an extra step of encasement and steaming of the leaves is added, which helps to oxidize the tea more slowly. This eliminates any overbearing astringency and grassy flavours often associated with a pure green tea like Sencha. Yellow tea is different enough in this processing to warrant a tea class of its own, adding a yellow hue to the leaves.
Tasting Notes: This exceptional tea offers a very light-yellow liquor and a sweet cup. Perfectly balanced astringency accompanies notes of pine nut and honeysuckle. It is a tea both delicate and full flavoured with a buttery linger and an attractive floral aroma.
Brewing Instructions: 2g per cup 90ºC water; steep 3-5 minutes.
