This White Tip Silver Needle 'Bai Ho Yin Zhen' is a remarkable and traditional Chinese tea that requires exceptional skill in plucking, handling and processing the tender spring buds

Crafted from the high-grade Da Bai plant varietal in the second week of April 2021, the sight and aroma of the dried buds indicate masterful work. Processing the buds entails simple withering and careful drying so the natural attributes of the varietal has been preserved and creates a delightful flavour. Only select bud sets have been used: buds are large and consistent in size and shape presenting a light yellow-green color and covered with tender, downy “hairs” giving them a traditional velvety appearance. Approximately 22,000 buds are required to create a single kilogram of tea. The result of this careful work is encapsulated in the cup.

Tasting Notes: This tea is smooth and silky and savoury. The dominant tone is herbaceous. Sweet grasses layer in the steep, capturing the essence of the spring harvest. Fresh apricots and honeysuckle coat the tongue. There is no astringency. The liquor glows a pale light yellow-green. The finish is fresh and a subtle sweetness lingers.

Brewing Instructions: 3 grams (1 well-rounded teaspoon) per cup. 95-100ºC. Steep 2 minutes. Drain all the water off the leaves to preserve flavours and provide additional steeps. Leaves typically yield 3 steeps.
