Description: The processing for a true Yellow tea is difficult and unique, making it quite a rare find. This tea was processed similarly to a black teas (sun withering, rolling, oxidization, and finally drying) with the extra step of encasement and steaming of the leaves is added - a process called "sealing in the fragrance" This process creates a tea different enough to warrant a tea class of its own, and it is clear that a slight yellow hue is present in the dried leaves. This eliminates any overbearing astringency and grassy flavours often associated with a pure green teas.
Tasting Notes: This exceptional tea offers a golden honeyed liquor and a sweet cup. There is very little astringency when steeped below 90ºC. Notes of toasted pine nuts, cocoa and honeysuckle. It is a tea that is both delicate and full flavoured with a buttery linger and an attractive sweet aroma.
Brewing Instructions: 2-3g per cup 85-90ºC water; steep 3 minutes.
