To produce certain teas, like the finely ground green tea leaves used for Matcha, the tea plants are covered and grown in the shade a couple of weeks before harvest. This adds a brighter green tone to the teas, and helps preserve a sweeter, grassier flavour. It also increases the chlorophyll, adding more antioxidants. 

Although China began to experiment with ground tea leaves centuries ago, it is Japan that is home to Matcha as we know it today. True Matcha has been used in the elaborate and exquisite rituals of traditional Japanese Tea Ceremonies for centuries. 

In recent years, Matcha has gained enormous popularity worldwide. Whether frothed with a whisk and hot water to be enjoyed straight from a tea bowl, or added to smoothies or tea lattés, pure matcha powder boasts great health benefits.

Izu Matcha is the most representative pure Japanese Matcha that we currently import.

This quality, shade-grown Japanese tea has been ground into a tasty cup with a lingering astringency, preceded by the flavour of a fresh summer grass.

Tasting Notes: Sweet and fresh on the nose with a nice kelpy finish. 

Brewing Instructions: 75ºC water; Create a paste with a few droplets of water, then add water and whisk to create a nice froth. Add water to taste.
