Ten years of Canadian winters, Cowichan summers and West Coast rain have developed our Westholme tea garden. Tea making innovation and old-world tradition come together in our collection of home-grown teas from the Cowichan Valley.
Description: Like our tea bushes, we've had to learn to flow with the ins-and-outs of each season, no matter what they bring. Much of the shared national identity is based on a vast geography and an intense variety of weather. Whether or not each citizen particularly enjoys this process of adaptability, it seems to be a trait we've all acquired.
Inspired by a particularly difficult winter on this coast, this tea is made from the adaptive Canadian experience. After deep cold and heavy snow, the first round of this tea was made with the frost-bitten leaves and branches of our tea bushes. A felled Big Leaf Maple on the property was harvested into chips, and cold-smoked with the hand-harvested and hand-processed tea leaves and twigs. We now use more mature leaves and branches to form the structure of this Japanese-style Hojicha green tea.
Tasting Notes:A woodsy, roasted green, that finishes with a sweet, smoky maple linger on the palate. Very low astringency. In each sip you can truly taste the deep terroir, paired with the warm comfort of an evening fire. As with our weather, this tea can be enjoyed hot or cold.
Brewing Instructions: 2g per cup. 90ºC water. Steep 5 - 8 minutes. Re-steep up to 3 times to experience different aspects of the flavour profile.
The tradition of tea is closely tied to place – the region, the mountain, the slope. In 2010 we began planting our own tea to take advantage of the unique terroir of our home. This is the very first Canadian estate-grown tea in the world – an authentic expression of the land, soil, and climate of our farm.
Tea cultivation and processing originated in China about 5,000 years ago, and while they carry on a rich and ancient tradition of producing high-quality teas of all styles, their green varieties are truly beyond comparison. The flavour profiles, aromas, and processing techniques from each tea-growing region vary tremendously. Some become silky and smooth, while some become powerful and astringent. Whether for casual daily drinking, or for special moments of ceremony and contemplation, Chinese green teas truly nurture the soul.
Description: From the Westholme terroir and studio, this gift set is a true taste and feel of our teafarm. It includes two exquisite handmade items, one from each of the Westholme Tea Company co-founders. A special footed cup, hand-built by Margit Nellemann in her studio beside our Teashop, and from Victor Vesely, a 10g pouch of hand-plucked, hand-made Canadian-grown roasted green tea from the slopes of our property. Handbuilt Yunomi Tea Cup: This teacup is made by Margit in her unique take on the Japanese yunomi, which is a cup used for daily informal tea drinking (as opposed to more traditional cups specifically made for tea ceremony). The cup size is perfect to hold in your hands, and excellent for enjoying the warmth of a tea without burning your fingers - the white, oolong and green teas that this cup is typically made to hold are brewed at lower temperatures for optimal aroma and flavour (below 100°C).

The organic teas we import are artisanally farmed and crafted. They may change with each harvest season. The same tea harvested at a different time of year and processed by a different tea maker will vary slightly in flavour and finish.
