Availability: This tea is usually plucked from the tender first flush of our tea bushes in early Spring. Due to the limited harvesting time, this tea is quite rare.

Description: Each morning, heavy clouds envelope the mountain peaks surrounding Westholme, quenching the slopes and trickling down to our valley and our tea plants. These mists of rain, and the gentle light that glows through the overcast sky, is what White Mist is named after - these are the ideal growing conditions for the young, tender leaves and buds of our exquisite white tea.

After being harvested by hand and gently laid out to air dry, the tea begins its gentle oxidation. As there is little processing involved with white tea types, the structure of the leaves and bud are maintained - as you steep this tea, watch them unfurl in the hot water.

Tasting Notes: The flavour is graceful and rich; the deep complexity of honeysuckle with hints of citrus and fresh leaves. The liqueur, though light, truly captures the deep essence of our Westholme terroir.

Brewing Instructions: Use 80ºC - 90ºC water (below boil) and pour over the loose leaves. 2.5 g per cup of water. Steep for 3-5 minutes. We invite you to enjoy several steeps.

Origin: Westholme BC, Canada

Availability:  This tea is the first tea we pluck in the early Spring before the summer heat changes the delicate flavour profile of the leaves. Due to the limited harvesting time, this tea is quite rare. 

Description: On the cusp of early Spring, we hear the riveting song of the Pacific Tree Frog echoing from the meadows and wetlands surrounding our tea garden. Their mysterious calls start at dusk, joining together to beckon in the new and untold start of our warmer seasons. 

Our Canadian-grown and hand-picked Tree Frog Green Tea consists of carefully selected tender leaves and buds from our 15 year-old tea plants. The first two leaves and a bud are steamed soon after harvesting, then rolled and wok-fired to finish.

Tasting Notes: A soft and smooth green tea with subtle notes of citrus and a sweet, grassy vegetal linger. Grows in a unique terroir earthiness and astringency with longer steepings.

Brewing Instructions: 2 g per cup. Use 85ºC water (below boil) and pour lovingly over the loose leaves. Steep for 3-5 minutes. Very low astringency will allow you to steep longer if you wish, and we encourage up to 3 re-steeps.

Style: Roasted Green

Origin: Westholme BC, Canada

Description: Like our tea bushes, we've had to learn to flow with the ins-and-outs of each season, no matter what they bring. Much of the shared national identity is based on a vast geography and an intense variety of weather. Whether or not each citizen particularly enjoys this process of adaptability, it seems to be a trait we've all acquired.

Inspired by a particularly difficult winter on this coast, this tea is made from the adaptive Canadian experience. After deep cold and heavy snow, the first round of this tea was made with the frost-bitten leaves and branches of our tea bushes. A felled Big Leaf Maple on the property was harvested into chips, and used to cold-smoke the hand-harvested and hand-processed tea leaves and twigs. We now use more mature leaves and stems to form the structure of this Japanese-style Houjicha green tea.

Tasting Notes: A woodsy, roasted green, that finishes with a sweet, smoky maple linger on the palate. Very low astringency. In each sip you can truly taste the deep terroir, paired with the warm comfort of an evening fire. As with our weather, this tea can be enjoyed hot or cold.

Brewing Instructions: 2g per cup. 90ºC water. Steep 5 - 8 minutes. Re-steep up to 3 times to experience different aspects of the flavour profile.

Style: Roasted Green

Origin: Grown at Westholme BC, Canada

Description: Based on a traditional Japanese Houjicha, a roasted twig and leaf tea, we created this roasted green tea from the fine twigs and leaves of our Camelia sinensis (tea) plants, under which local families of California Quail often make their home. Hand-cut and hand-harvested for processing, the tea and twigs are wok-fired at high heat to capture a comforting smooth roasted flavour. Fibrous green woody notes appear in second and third steepings.

Tasting Notes: This wonderful roasted green tea offers a gentle steep of sweetly toasted warm tobacco. The tea grows in sweetness as it sits in the cup. On second and third steeps, the taste is reminiscent of fresh-cut autumn firewood. When made into an iced tea with the Cold Steep Method, a refreshing smoked apricot with an understated dryness is tangible on the palate. 

Brewing Instructions: 2 - 4 g per cup. Pour 100ºC water (full boil) over twigs and leaf. Steep for 5 minutes. Re-steep 2 - 4 times. For Iced Tea, we recommend using the Cold Steep Method.

• Each individual guest must have pre-booked their spot on the tour. We have the capacity to accommodate up to 16 guests per tour.
• This experience is not suitable for children under the age of 10, or those who are unable to stay engaged + participate for the full 1.5 hour duration of the Tour + Tasting. Children are considered guests, and must have secured a ticket for their seat. The Westholme property is an active farm, and children must be supervised at all times to ensure their safety. 
• Dogs are not permitted in the tea garden, teashop or gallery. Our policy is that if dogs are support animals, we can allow them in the teashop. Additionally, we have a spot just outside the teashop with a water dish and some shade which anyone is welcome to use.
• Each morning tour begins at 10:30am sharp and will run until approximately 12pm. 
• Please wear appropriate footwear for walking on the tea garden slopes. Please alert us in advance if you have any accessibility needs or require certain accommodations.
• Please inform us of any/all food allergies well in advance
• You will be sent an e-mail noting further details close to your chosen date.
  

In the event of a cancellation the following applies:

• For cancellations greater than 48 hours in advance of the schedule tour start time we can issue a refund less a 10% administrative fee.
• For cancellations less than 48 hours in advance of the schedule tour start time we can issue 25% refund.
• We are able to reschedule your dates free of charge at any point, although we greatly appreciate advance notice. We also cannot guarantee the availability of any future dates.
