Description: White Monkey, also known as Bai Mao Hou, is a green tea made traditionally with the first two leaves and the bud of the tea plant. White Monkey is produced in the Wuyi Mountains in the North of Fujian province. The soft, downy white appearance of the buds, reminiscent of the soft fur on the hands of a monkey, inspired this tea’s name. These long, full eaves slowly unfurl during the steep, changing the cup to a crystal clear and delicate, nearly pink tone of ivory green.
Tasting Notes: A gentle crispness unfolds with the tea leaves with a subtle floral perfume. The tangible astringency sits mid-tongue, balanced with a natural green sweetness that lingers pleasantly long after the cup is finished.
Brewing Instructions: 2g per cup. 90ºC water. steep 3 minutes.
