TEA OF THE WEEK :: DRUM MOUNTAIN WHITE CLOUD

Grown at a Buddhist Monastery in the Drum Mountains of Fujian Province, this popular white tea is also known as ‘Gu Shan Bai Yun’. Though not certified organic, the tea has been made according to strict traditional processes. Experiment with distinct variations in flavour according to the length of steep and the grammage of tea per cup. This tea is also excellent for re-steeping, and is fabulous on its own or paired with a savoury meal.

A fresh honeysuckle scent precedes this white tea. The cup is smooth, buttery and crisp like a fresh peeled cob of summer corn. The flavour of the tea grows in strength as it sits in the cup, though as a white tea it remains just shy of an astringent bite. Flavour evolves and changes considerably during subsequent re-steeps.
