Refreshing Rooibos Recipe

Rooibos is produced from the Aspalathus linearis shrub, also known as “red bush.” The plant is native to the Cederberg Mountains of South Africa. Once plucked and collected, the leaves are processed into a tisane. After harvest, the cut branches undergo an oxidation process similar to the processing involved in the creation of black tea.
This technique brings out the rich, warm red colouring of the harvest, both in the branches and in the steep, and enhances the flavour into a full-bodied and naturally sweet cup. This pure, organic rooibos steeps to a beautiful clear red amber infusion. Earthy wood notes add an almost savoury aroma to the fruity and vanilla-sweet finish.

  1. Clean your preferred vessel, jar or pitcher
  2. Scoop Rooibos into your vessel (1.5 x the amount you would normally use) - We used around 4 grams per 250ml of water as Rooibos has low tannins and doesn't have a bitter flavour
  3. Fill vessel with cold, filtered water and place lid over vessel
  4. Place in fridge and allow around 6-10 hours for the tisane to steep
  5. A great tip for preparing large amounts of iced tea is to make ice cubes from the tea. This allows for keeping the tea chilled without diluting the flavour.

Note - brewed tea has a shelf life. For best results, tea stored at room temperature is best enjoyed within 2 days and tea stored in the refrigerator is best enjoyed within 3-4 days.
