Rooibos is produced from the Aspalathus linearis shrub, also known as “red bush” (as pictured above, courtesy of Rooibos Council). The plant is native to the Cederberg Mountains of South Africa. Once plucked and collected, the leaves are processed into a tisane. After harvest, the cut branches undergo an oxidation process similar to the processing involved in the creation of black tea. This technique brings out the rich, warm red colouring of the harvest, both in the branches and in the steep, and enhances the flavour into a full-bodied and naturally sweet cup. This pure, organic rooibos steeps to a beautiful clear red amber infusion. Earthy wood notes add an almost savoury aroma to the fruity and vanilla-sweet finish.
