Description: Grown at a Buddhist Monastery in the Drum Mountains of Fujian Province, this popular white tea is also known as ‘Gu Shan Bai Yun’. Though not certified organic, the tea has been made according to strict traditional processes. Experiment with distinct variations in flavour according to the length of steep and the grammage of tea per cup. This tea is also excellent for re-steeping, and is fabulous on its own or paired with a savoury meal.

Tasting Notes:  A fresh honeysuckle scent precedes this white tea. The cup is smooth, buttery and crisp. Delicate fruit tones layer on the tongue, reminiscent of lychee fruit. The flavour of the tea grows in strength as it sits in the cup, though as a white tea it remains just shy of an astringent bite. Flavour evolves and changes considerably during subsequent re-steeps. 

Brewing Instructions: 4g per cup. 90 - 95ºC water. Steep 2 minutes. Will re-steep several times. 


The organic teas we import are artisanally farmed and crafted. They may change with each harvest season. The same tea harvested at a different time of year and processed by a different tea maker will vary slightly in flavour and finish.
