Availability: This tea is the first tea we pluck in the early Spring before the summer heat changes the delicate flavour profile of the leaves. Due to the limited harvesting time, this tea is quite rare.
Description: On the cusp of early Spring, we hear the riveting song of the Pacific Tree Frog echoing from the meadows and wetlands surrounding our tea garden. Their mysterious calls start at dusk, joining together to beckon in the new and untold start of our warmer seasons.
Our Canadian-grown and hand-picked Tree Frog Green Tea consists of carefully selected tender leaves and buds from our 14 year-old tea plants. The first two leaves and a bud are steamed soon after harvesting, then rolled and wok-fired to finish.
Tasting Notes: A soft and smooth green tea with subtle notes of citrus and a sweet, grassy vegetal linger. Grows in a unique terroir earthiness and astringency with longer steepings.
Brewing Instructions: 2 g per cup. Use 85ºC water (below boil) and pour lovingly over the loose leaves. Steep for 3-5 minutes. Very low astringency will allow you to steep longer if you wish, and we encourage up to 3 re-steeps.
