Honeybush

Description: Pure, oxidized honeybush offers a bright, red-gold infusion. Honeybush is produced from the Cyclopia intermedia plant which grows in the Western and Eastern Cape Provinces of South Africa. This tisane gets its name from the honey-sweet scent of abundant yellow flowers that are often present during harvesting time, although it is the leaves of the bush that are used to produce beverage. It is a cousin of the Rooibos plant and shares many similarities, though it is considered comparatively fruitier and a bit sweeter in taste. The steep is robust, with a complex sweetness similar to the cup’s aroma - reminiscent of dark berries and wildflowers. Unlike the camelia sinensis (tea) plant, honeybush does not bitter when steeped for long periods of time – it is frequently simmered on a stove throughout the day, lending its beautiful scent to the room as well as your teacup. Enjoy on its own or with a spot of milk.
Tasting Notes: A delicate, deep sweetness and the scent of dark berries dance on the nose and palate, with wisps of mild honey and a vanilla linger.

Rooibos Earl

Ingredients: Rooibos from South Africa, Orange Peel, 100% Pure Cold-Pressed Oil of Bergamot from Calabria, Italy
Description: Rooibos is produced from the Aspalathus linearis shrub, also known as “red bush.” The plant is native to the Cederberg Mountains of South Africa. Once plucked and collected, the leaves are processed into a tisane. After harvest, the cut branches undergo an oxidation process similar to the processing involved in the creation of black tea; This technique brings out the rich, warm red colouring of the harvest, both in the branches and in the steep, and enhances the flavour into a full-bodied and naturally sweet cup. Many people now use it as a base for tea lattés; the natural sweetness of rooibos and the colouring of the steep hold up against milk almost as well as a black tea. This makes it an excellent caffeine-free alternative for those who still want a touch of milk (or milk alternative) and honey in their cup. A truly Italian organic, oil of bergamot provides the classic Earl Grey ingredient, cold-pressed from the rind of the bergamot orange, or Citrus bergamia.
Tasting Notes: This tisane is our herbal take on the classic Earl Grey tea. The steep is delicately fruity and tangy with a full-mouthed flavour and gently layered savoury sweetness. The Rooibos provides an earthy, almost woodsy foundation and a lightly sweet finish reminiscent of fresh vanilla. Bright citrus notes from both the bergamot and the orange peel uplift the steep. The crisp citrus zest compliments the Rooibos to pull a greater depth of flavour from the tisane base. A classic Earl Grey tone is certainly present, but offered from a new perspective with an infusion that is a beautiful red-amber and can be enjoyed any time of day!

Jasmine Phoenix Dragon Pearls

Description: The tender first bud and two leaves are plucked in early spring to be made into this soft green tea. When the jasmine flowers come into bloom, the fresh tea leaves are layered with the freshly picked blossoms. The consuming fragrance of jasmine is absorbed by the tea, resulting in a gorgeous, floral cup. The tea is then rolled into beautiful tight spirals, which unfurl as they steep to release their divine aroma and naturally sweet, fresh bouquet of flavour.
Tasting Notes: A sublime and high quality green jasmine tea with a smooth finish. The perfume of the cup lingers on the nose and palate well into the second and third steep.

Description: From the region of Hangzhou, in Zhejiang Province, we chose the famous Long Jing Dragonwell green tea for this lively blend. The flavour of this tea is a naturally sweet beginning that grows in vegetal, toasty grass notes. This sweet aroma pairs with our blend of calendula flowers and ginger root, carrying the subtle spiciness and vitality of both. Refreshing and warm, this tea is ideal during any season, and is wonderful iced using the cold steep method.

Assam CTC

Description: CTC stands for Cut Tear Curl, a method of tea processing that was developed in India in the 1930’s. After plucking, the leaves destined for CTC processing go through similar oxidation stages as a regular black tea. However, instead of rolling the leaves in this final stage, they are passed through a rotorvane, thereby breaking the cells and exposing more of the oils contained in the tea leaves. The concluding curling of the cut and torn tea leaves results in small pellets that are prepared like regular loose tea.
Tasting Notes: The smell of fresh warm earth on the nose and palate, and light vegetal notes. A lingering brown sugar sweetness grows in strength as it sits in the cup. A moderate astringency rests mid-tongue, with a slight dryness from the tannins. Takes milk and honey exceptionally well.

Nilgiri Decaf

Description: Located in Tamil Nadu State (formerly Madras State) in India, the Nilgiri district is found in the southern portion of the Western Ghats Mountains. Nilgiri, which translates to Blue Mountain, is a class of tea on its own (much like Assam) and is known to be bold, aromatic and flavourful, and grow at least 1,000 meters above sea level. Korakundah Estate is one of the higher elevated tea estates in the Nilgiri region. This estate, established in the 1930’s, it is the first to obtain Organic Certification in the area. A great choice for those who enjoy a cup of black tea but need an option with limited caffeine. Decaffeinated using the organic swiss water method.
Tasting Notes: An auburn-gold liquor in the cup, this decaffeinated black tea begins delicately. As you continue sipping, the tea starts to layer in gentle astringency, covering the palate with malt and brassy, earthy notes.

Lapsang Souchong

Description: The larger leaves from the tea plant – the souchong – are specially harvested and processed for this black tea. The tea is roasted in bamboo baskets and heated over burning pine wood. The pine smoke is what contributes to the extraordinarily bold flavour and smell of this tea. Lapsang Souchong has gained huge popularity outside of China, both for its drinking and culinary uses. Aside from enjoying it by the cup, Lapsang makes amazing marinades, vinaigrettes, sauces and desserts.
