Description: From challenge comes opportunity. The recipe for this delightful morning tea was hand crafted at Westholme in an effort to overcome supply shortages faced across the tea industry during 2020-2021. At a time where we are unable to blend our original home recipe versions of traditional breakfast teas, Island Breakfast emerged in response - and we enjoy this tea so much it is here to stay! Crafted with broken-leaf organic pekoe teas sourced from Estates around the world, Island Breakfast weaves together a crisp tea from Ceylon, a malty Assam tea, and a Chinese black tea known for its cocoa complexity. Excellent on its own, or with a spot of milk and honey. Island Breakfast is a well-rounded, bold yet comforting breakfast tea. It holds the middle seat between our Cowichan Breakfast and Black Breakfast blends.
Tasting Notes: This tea is forthright with sweetly toasted earthy notes, a light malt and a crisp citrus tartness. A light aroma of delicate florals rises from the cup. The steep stays smooth from beginning to end. It finishes strong with a pleasant dry astringent linger. A hint of burnt caramel aroma sits at the bottom of the empty cup. May this breakfast blend inspire all those who sip it to start their morning with the same perspective: ready to find the opportunity in any challenge.

Description: Throughout Western and Central Asia, cardamom is used to add a perfumed complexity and sweetness in standard black teas. We chose a bold and malty Assam black tea, combining it with green cardamom pods, lightly cracked to release their astonishing flavour. As a luxurious addition, we also added pure vanilla beans for a subtle natural sweetness. Vanilla and cardamom come together to add just enough creamy taste to the classic malt of the Assam tea. A perfect morning cup, enjoyed on its own or with milk and honey.
Tasting Notes: Naturally sweet and complex on the nose, the pure vanilla bean in this blend adds a lovely, subtle cream to the texture of this tea's aroma and palate. The unique perfume of the cardamom, reminiscent of deep citrus, enhances the strong steep and malt of the Assam tea with freshness on the palate. The linger is luxurious and sweet.

Description: Rooted is a powerhouse of beneficial roots with loads of flavour and a peppery kick; A wonderful tonic for the immune system. The turmeric turns this steep a deep, rich gold and adds earthiness and gentle spice to the rainbow pepper blend and Sichuan pepper. The mouth fills with gentle, comforting spices, slight sichuan tingle (a taste sensation referred to in China as "ma"), balanced and complimented by and a natural sweetness that lingers on the tip of the tongue from the ginger and liquorice. Steep and sip this infusion during a cold to soothe the throat, or when trying to curb a craving for refined sugar.
Tasting Notes: This infusion is as earthy as the roots from which it was made. Fills the mouth with gentle, comforting spices and a naturally sweet linger on the tip of the tongue.

Description: The rich, red hibiscus in this infusion makes it one of our most striking to steep. The cup is a gorgeous ruby colour. Description: This black and green tea blend was inspired by age-old tales of traveling tea merchants. Navigating their horse-drawn caravans from China through the cold climate of Russia, and finally into Europe, we created our own version of the famous Russian Caravan tea - the smell of the pine-smoked Lapsang Souchong in this blend reminiscent of cold nights camping on the road. The teas in this blend come from China, Japan, India and Sri Lanka - taste experiences and traditions from four of the biggest tea producers in the world. The result is a complex and aromatic cup, with a subtle lavender perfume woven through the pine steam of a fresh-poured cup.
Tasting Notes: The fine balance of tea from many regions and many traditional processes are woven together for this blend. The cup is at once robust in its savoury pine strength, while also gently sweet and understated. Complex crispness and notes of citrus linger on the palate after a pine-smoked welcome. A gentle lavender linger and slight malt finishes the smooth cup.

Description: A true Earl Grey tea consists of a fine black tea scented with the unique fragrance of pure oil of bergamot. We’ve made a wonderful and extravagant expansion on this classic tea by adding pure vanilla bean, orange peel, and Ceylon tea to enhance the natural sweet citrus notes that Earl Grey is known for. Using beautiful large tea leaves, the flavours in this blend unfold gently into a smooth, warm and comforting black tea. This cup is excellent and naturally sweet on its own, but also handles milk and honey nicely.
Tasting Notes: The beautiful, bright amber cup smells of sweet vanilla malt and fresh zested citrus peel. Begins with soft vanilla and the crisp refreshing fruity notes of Ceylon tea on the tongue. This builds to orange peel and a warm malted cinnamon flavour, astringency building in the mid-tongue and rounding off into a sweet linger.

Description: In 2012, we were invited to contribute to the James Barber Chef’s Table Fundraiser - the theme of the event that year was Honey. Naturally, we looked to our garden friends for inspiration. Bees are hard-working, friendly, finely dressed in their yellow pollen breeches, and have a bit of a sting (when necessary). This led to the creation of a scrumptious infusion with each of these qualities in mind; the calm and earthy nettle leaf, brisk yellow lemon peel and zesty lemon verbena combine with a gentle tally of warming masala spices. Much like the tail-end of a bee, the cup has a 'piquant' peppery ginger finish. The result is a lively and delicately spiced herbal chai that pairs beautifully with honey, as intended.
Tasting Notes: Earthy notes of nettle ground sweet, complex masala spices on the tongue. Gentle citrus zest and the natural sweetness of cinnamon and ginger enliven each sip.

Description: This infusion is the encapsulation of a sunny summer day, and all that it shines its golden light upon. The petals of rose and linden flower add high floral notes atop the lower earthy tones of linden leaf, nettle and clover. Lemongrass imparts a warm citrusy twist, and leads to the unrefined and naturally sweet stevia leaf to finish. The cup is complete, complex, and carries with it a calming herbal perfume. Reminiscent of the refreshing and revitalizing flavour of a perfect, warm day.

Calm Lav

Description: When we first moved to our property in the Cowichan Valley, our dream was to grow lavender. Inspired by rolling hills of purple shrubs, we started populating the south facing slope of our garden with lavender plants. A few years later, however, we switched our focus to the Camellia sinensis plant, and our flowers were replaced with bushes of tea. Many of our original tea blends contain lavender – an ode to our history on the farm. They have become much loved and remain on our shelves.Chamomile and lavender produce a gentle floral blend that smells as wonderful as it tastes. Both plants are known for their soothing properties, which help calm the nervous system and ease digestion.
Tasting Notes: The earthy cream of chamomile flowers pairs with the refreshing elegance of lavender for a cup that smells and tastes divine. The cup is flavourful and gentle – full of a wonderful floral complexity. A perfect tisane to sip and calm the senses.

Matcha Keiki - Limited Harvest

Description: Made from the premium, shade-grown Tencha tea leaves, this second harvest matcha is carefully and freshly ground through a traditional stone mill. The depth of flavour and sweet vegetal qualities make this matcha excellent for drinking (prepared traditionally in a tea bowl, or mixed in smoothies, lattés, etc) and for culinary explorations.
Tasting Notes: The aroma of the prepared matcha is a fresh, sweetly toasted rice, which develops a pleasant kelp finish. The creamy texture and savoury-sweet nutty flavour carries the palate through a complex astringent depth on the sides of the tongue. Develops a clear, mineral linger with vegetal qualities.
Brewing Instructions:
Japanese Usucha Method
1 teaspoon Matcha Powder for 70ml (approximately 1/4 cup) water. 75ºC - 80ºC water. Place matcha powder into a teabowl. Add a small amount of water, and create a paste using a bamboo matcha whisk in a zig-zag motion. Add the rest of the water, and whisk thoroughly until a nice froth is achieved. Serve immediately.
Western Method
1/2 - 1 teaspoon matcha powder per cup of water. Follow Usucha method preparation steps. Add more water to taste and/or to change the thickness of the drink as desired. To make a Matcha Latté, use 1/2 water + 1/2 warm milk or milk alternative for the liquid, and whisk as usual - for an iced Matcha Latté, pour frothed mixture over ice cubes.
