Maple Smoked Green - 2022

Description: Like our tea bushes, we've had to learn to flow with the ins-and-outs of each season, no matter what they bring. Much of the shared national identity is based on a vast geography and an intense variety of weather. Whether or not each citizen particularly enjoys this process of adaptability, it seems to be a trait we've all acquired.
Inspired by a particularly difficult winter on this coast, this tea is made from the adaptive Canadian experience. After deep cold and heavy snow, the first round of this tea was made with the frost-bitten leaves and branches of our tea bushes. A felled Big Leaf Maple on the property was harvested into chips, and cold-smoked with the hand-harvested and hand-processed tea leaves and twigs. We now use more mature leaves and branches to form the structure of this Japanese-style Hojicha green tea.
Tasting Notes: A woodsy, roasted green, that finishes with a sweet, smoky maple linger on the palate. Very low astringency. In each sip you can truly taste the deep terroir, paired with the warm comfort of an evening fire. As with our weather, this tea can be enjoyed hot or cold.
Brewing Instructions: 2g per cup. 90ºC water. Steep 5 - 8 minutes. Re-steep up to 3 times to experience different aspects of the flavour profile.

Description: Persia is one of Westholme’s very first blended teas. Drawing inspiration from West Asian tea culture, where tea is often served with morning and afternoon meals, and to guests and neighbours throughout the day, we created a flavourful and refreshing tea for any time of day.
Tasting Notes: A gentle, floral citrus scent builds in sweetness as it sits in the cup. This tea has a gentle muscatel on the tip of the tongue, with a pleasant astringency that curbs into soft notes of lavender and bergamot. The cup is pleasantly complex, crisp, and completely refreshing.

Known as ‘Red Tea’ in China, the tea leaves from the Camellia sinensis sinensis plant are smaller and finer than their Indian counterparts, the Camellia sinensis assamica, and prefer cooler mountainous regions. Usually plucked by hand and gently processed, the end result are exquisitely fragrant teas with lesser levels of astringency and a soft body.
Several Chinese provinces are famous for their regional tea selections: Fujian Province is home to the well-known, pine-smoked Lapsang Souchong, while Keemun tea, the official choice of the British Queen, is produced in Anhui Province. Yunnan province produces the ever-popular varieties of Yunnan black tea and is also the region where China started its tea cultivation.

Description: Two beautiful Chinese teas come together in this floral blend: White Peony (Bai Mu Dan), a white tea named for its floral notes, and Jasmine tea, a well-known green tea that has been oxidized between layers of fresh jasmine blossoms. The steep has a lovely natural sweetness and gentle astringency, rounded by the delicate aroma of rose petals. The result is an elegant tea with a bouquet of floral notes, and a gentle cup with a pleasant, almost imperceptible astringency.
Excellent hot or iced (using the cold steep method).

Assam Supreme TGFOP

Description: This Assam Supreme TGFOP (Tippy Golden Flowery Orange Pekoe) is a high-grade, whole leaf Assam displaying classic and delightful malty notes with a warm character. Due to the large surface area of the leaves, it steeps with slightly less astringency and boldness than a broken-leaf Assam, creating a cup that is both rich and wonderfully smooth. Steeps to an earthy red sienna. Excellent on its own, or with a touch of milk and honey.
Tasting Notes: The nose of the cup has toasted notes of dried hay and hints of brown sugar. Smooth on the palate, this tea maintains a rich malt flavour quintessential to an Assam tea without the strong linger of tannins, and pleasant traces of sweet honey at the back of the palate.

Pure Spice

Description: A mélange of traditional Indian spices packed with flavour and a gentle bite of pepper. This versatile tisane can be steeped and enjoyed as-is, or cooked with milk (or a milk alternative), to create an excellent herbal chai. Add honey or a touch of pure maple syrup to taste. This blend can also be used as a mulling spice to add a little depth and interest to your cider or wine during the cooler months. Also excellent for use as an infusion to add to a spiced soup or a curry.

Description: Fresh from the Cederberg Mountains in South Africa, this organic Rooibos is packed with an excellent full flavour and an abundance of antioxidants. The orange peel in this tisane accompanies the rooibos for a deep, toasted citrus steep, ending with floral notes and natural sweetness from the lavender and vanilla bean. A soothing favourite.

Description: A great choice for those who delight in a cup of Earl Grey but need an option with limited caffeine. Decaffeination is achieved via the organic swiss water method. Nilgiri, which translates to Blue Mountain, is one of India’s well known tea districts. Nilgiri tea is known to be crisp, aromatic, and flavourful. This tea is grown at the Korakundah Estate which sits at one of the highest elevations in the Nilgiri region. This estate was stablished in the 1930’s, and the first in the area to obtain Organic Certification. A truly Italian organic, oil of Bergamot from Calabria provides the classic Earl Grey ingredient, cold-pressed from the rind of the bergamot orange, or Citrus bergamia. A tea to be enjoyed any time of day!
Tasting Notes: An auburn-gold liquor and earthy aroma invokes the senses. This decaffeinated black tea is uplifting and full of rich flavour (it is certainly no wimpy decaf!). From the first sip the tea layers in gentle astringency with copper and dry woodsy tones, and even a light floral note. As you sip the flavour further develops and covers the palate. An aroma lingers in the cup like freshly cut wood. The crisp bergamot citrus compliments the earthy Nilgiri and pulls even greater depth out of the tea flavour.

Rosie

Ingredients: Green Rooibos, Rose Petals, Rosehips
Description: Rooibos is produced from the shrub Aspalathus linearis, also known as “red bush,” which is native to the Cederberg Mountains of South Africa. Green Rooibos is processed much like a green tea; it is not oxidized and therefore retains more of its original, green colour. Green rooibos has less savoury and toasty notes than a regular rooibos infusion; The fresh, mildly sweet green version of the plant has gentle notes of fresh grass. This has been paired with dried rosehips and rose petals, adding a comforting floral bloom to the palate and a gorgeous perfume to the cup. An excellent, calming infusion.
Tasting Notes: Notes of sweet green hay ground this infusion, which weaves the floral aroma of rose petals and the gentle tang of rosehips through each sip, start to finish.

Description: The moon has always been a paradoxical figure. While it exists in total darkness, it also has the ability to reflect light to guide our nighttime creatures. Inspired by age-old mythologies, this tisane is a perfect balance of two opposites, much like the light and dark side of the moon: tartness and sweetness. Made with a wealth of herbs and flowers containing beneficial antioxidants and enzymes, the infusion offers a gentle, natural sweetness that will soothe and restore you to the core. Quail's Plume - 2022

Description: Based on a traditional Japanese Hojicha, a roasted twig and leaf tea, we created this roasted green tea from the fine twigs and leaves of our Camelia sinensis (tea) plants, under which local families of California Quail often make their home. Hand-cut and hand-harvested for processing, the tea and twigs are wok-fired at high heat to capture a comforting smooth roasted flavour. Fibrous green woody notes appear in second and third steepings.
Tasting Notes: This wonderful roasted green tea offers a gentle steep of sweetly toasted warm tobacco. The tea grows in sweetness as it sits in the cup. On second and third steeps, the taste is reminiscent of fresh-cut autumn firewood. When made into an iced tea with the Cold Steep Method, a refreshing smoked apricot with an understated dryness is tangible on the palate.
Brewing Instructions: 2 - 4 g per cup. Pour 100ºC water (full boil) over twigs and leaf. Steep for 5 minutes. Re-steep 2 - 4 times. For Iced Tea, we recommend using the Cold Steep Method.

Honeybush

Description: Pure, oxidized honeybush offers a bright, red-gold infusion. Honeybush is produced from the Cyclopia intermedia plant which grows in the Western and Eastern Cape Provinces of South Africa. This tisane gets its name from the honey-sweet scent of abundant yellow flowers that are often present during harvesting time, although it is the leaves of the bush that are used to produce beverage. It is a cousin of the Rooibos plant and shares many similarities, though it is considered comparatively fruitier and a bit sweeter in taste. The steep is robust, with a complex sweetness similar to the cup’s aroma - reminiscent of dark berries and wildflowers. Unlike the camelia sinensis (tea) plant, honeybush does not bitter when steeped for long periods of time – it is frequently simmered on a stove throughout the day, lending its beautiful scent to the room as well as your teacup. Enjoy on its own or with a spot of milk.
Tasting Notes: A delicate, deep sweetness and the scent of dark berries dance on the nose and palate, with wisps of mild honey and a vanilla linger.
