Description: Earl Grey tea is favoured by many throughout the Western world. Though its creation is fairly recent, it is not truly known if the British Prime minister Charles Grey, the 2nd Earl of Grey, actually inspired this popular tea blend. A true Earl Grey tea consists of a fine black tea scented with the unique fragrance of pure oil of bergamot. The oil is taken from the rinds of the bergamot orange, or Citrus bergamia, a plant native to Italy. We use a whole-leaf Assam with a nice body and a smooth finish as the base tea for our Classic Earl, then add a true Italian cold-pressed, organic oil of Bergamot from Calabria, Italy. The fragrance is bright and fresh; the flavour is delightful. This combination produces one of the truest and finest Earl Greys you will ever drink.
Tasting Notes: A high-quality Earl Grey is prized for its beautiful, uplifting aroma, citrus taste, and robust steep. Ours is no exception. The lively aroma of fresh bergamot peel is accompanied by sweet malt notes on the nose. This flavour translates to a warm cup with steep that is smooth, yet bold. This tea has lovely depth of flavour. The astringency builds to a pleasant tannin bite mid-tongue, reminiscent of fresh lemon, then fades quickly into a gentle, refreshing linger. Elegant, crisp, and completely comforting.

Description: People from India (and other parts of the world) are often puzzled by the North American use of the word Chai, which doesn’t actually refer to the mixture of warm spices that we’ve come to associate it with. Chai in Hindi simply translates to ‘Tea’ - in Urdu it’s Chaay, in Mandarin and Cantonese it’s Cha, in Arabic it’s chai or shai, and so on. The word Masala is actually what refers to the spice mixture itself, the contents of which depend on a few factors: the destined use of the spices (a curry dish, a spiced tea, a dessert, etc), the state or region, and even the family. There is no set recipe for a proper masala mixture, and while every chaachee (auntie) may claim to have the best, we hope you enjoy ours!
We went through several spice combinations before we settled on this recipe. It cooks well, steeps well, and is amazing on its own or combined with milk (or milk alternative) and honey. We used Assam CTC, the cut leaves of which steep to a strong, malted dark amber. The CTC (stands for Cut, Tear and Curl) tea base is bold and ideal for boiling – the traditional way of making chai – and perfectly capable of standing up to the rich flavours of the masala spices. We hand blend the black tea with organic spices – ginger, cardamom, cinnamon, black pepper and cloves. You can also cook this blend on the stove with a sweetener to create a Masala Chai Simple Syrup to make your own Chai Lattés at home.
Tasting Notes: The dark, rich malted flavour of a black Assam tea acts as the base for our tantalizing spice blend. Wonderful, fresh spices greet the nose and bring a natural, complex sweetness to the palate. Ends with a pleasant, flavourful cardamom linger and some gentle astringency on the tongue.
Brewing Instructions: 2 - 3g per cup. 100ºC water. Steep 3-5 minutes.

Out of our desperation came a happy accident - we created Mysteaque, whose recipe has remained unchanged since the fated visit, and has become as much a gift for us and our customers as it was for our visitor. Description: After years of many requests for this tea, 2021 is the year we deliver. It is rare to find a Cream of Earl Grey which does not contain anything but true ingredients of nature. The ‘cream’ comes solely from pure vanilla bean grown in Madagascar. A blend of Assamese teas alongside a truly Italian organic oil of Bergamot from Calabria provides the classic Earl Grey base tea. The oil is cold-pressed from the rind of the bergamot orange, or Citrus bergamia. This blends with rich and aromatic vanilla to provide a tea that is both comforting and refreshing.
Tasting Notes: This tea offers a lovely depth of flavour and alluring aroma. Warmed brown-sugar notes add to the crispness of the bergamot, translating into delightful tones reminiscent of grapefruit. Description: This comforting blend was inspired by a large patch of stinging nettle on the property near our shop. Inspired by the beloved Lewis Carroll novel, and by our own imaginations, we decided to create an exquisite black tea blend to honour the fun and festivities of the most extravagant Mad Hatter tea party we could think of. Playing on the theme of royal(tea), we used only stately and exclusive black teas from China and Sri Lanka, making this cup fit for the Queen of Hearts. The steep is flavourful, wonderfully smooth and velvety on the tongue. Subtle aromatic notes of honey and sweet golden grasses arise in the steam, accompanying the light astringent linger. Much like the Cheshire cat, you will find the contents of your cup disappear quite mysteriously after pouring, leaving you with a happy grin.

Description: We have brought together some of China and Sri Lanka’s finest black teas. Our new 2022 recipe weaves together a different combination of high quality whole leaf black teas, which we have carefully selected for both pairing with each-other and with the very same ratio of pure vanilla beans as our previous recipe. Black Cream is the epitome of a smooth blend. The warm, slightly toasty notes of the Chinese black tea pair wonderfully with the fresh and fruity notes of the Sri Lankan tea. These are mixed with pure vanilla bean, resulting in a naturally sweet, rich cup with notes of toasted cocoa and an incredibly smooth, creamy finish. A warm and comforting, aromatic and naturally sweet black tea.

Brewing Instructions: 2g per cup. 100ºC water. Steep for 5+ minutes.
