"Take some more tea," the March Hare said to Alice, very earnestly.

"I've had nothing yet," Alice replied in an offended tone, "so I can't take more."

"You mean you can't take less," said the Hatter, "it's very easy to take more than nothing."

- Alice's Adventures in Wonderland (1865) by Lewis Carroll

When one sips a cup of good tea, the mind may become free to wander elsewhere…We have crafted a cup to send you to Wonderland.

This tea was inspired by our beloved + popular tea blend: Mad Hatter. We have been challenged to continue to blend our original recipes, with the key teas used in this recipe having mysteriously disappeared…During a time when we have been challenged to source the teas we have traditionally loved, our journey to find new perfect teas has resulted in travelling down one of the many loopy rabbit holes we can often find ourselves in here at Westholme…and leading us to craft new stately black blends - fit for any Queen of Hearts.

We have drawn inspiration from the classic Lewis Carroll novel, the fun and festivities of extravagant Mad Hatter tea parties we used to host in our Tea Garden, and from the new teas we have found along the journey which have quickly become favourites.

Tasting Notes:
A blend of fine, carefully selected aromatic black teas. The cup offers subtle notes of vanilla, spice and sweet grass. Refreshing and refined, with little to no astringency. Excellent on its own, or with a touch of milk and sweetener. We also recommend trying with several scones, cucumber sandwiches, a mountainous layered cake, and perhaps a companion or two (now, of course whether your company is friend, pet or book…that is up to you!). Truly a perfect cup to satsify in the morning, the afternoon, the evening, or whatever time it happens to be in Wonderland at that moment.

Brewing Instructions: 2g per cup. 100ºC water. steep 3-5 minutes.

Organic

China has a rich and ancient tradition of producing high quality teas of all varieties, and black tea is no exception. This is where tea culture and industry, as we know it, began nearly 2,000 years ago.

Known as ‘Red Tea’ in China, the tea leaves from the Camellia sinensis sinensis plant are smaller and finer than their Indian counterparts, the Camellia sinensis assamica, and prefer cooler mountainous regions. Usually plucked by hand and gently processed, the end result are exquisitely fragrant teas with lesser levels of astringency and a soft body.

Several Chinese provinces are famous for their regional tea selections: Fujian Province is home to the well-known, pine-smoked Lapsang Souchong, while Keemun tea, the official choice of the British Queen, is produced in Anhui Province. Yunnan province produces the ever-popular varieties of Yunnan black tea and is also the region where China started its tea cultivation.

The organic teas we import are artisanally farmed and crafted. They may change with each harvest season. The same tea harvested at a different time of year and processed by a different tea maker will vary slightly in flavour and finish.
